WHere is a simplified take on a beverage found on the seasonal cocktail list. It's a large-volume prepared mix that is bursting with essence of the festive period, rendering it excellent for your holiday party. Save the extra syrup to use in brunch beverages, puddings, or to make another batch of this cocktail.

Yields 10 guests
For the Clementine Cordial (produces 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g granulated sugar
To make the Cocktail (makes 850ml, serving 10)
400ml premium vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (as made above)
A few cranberries, to garnish
Mandarin essential oil, to finish
Method
For the Syrup: Combine the listed items in a pot, heat until it reaches a gentle boil, stirring so the sugar melts. After that, turn off the stove allowing it to reach room temperature completely. Decant to a clean bottle, close it and refrigerate it chilled, where it will keep for up to a month.
To make Batch Mix: Mix all the spirits and syrup into a big jug, leave to sit for one hour, then pass it through preferably using muslin, to ensure it's completely strained.
When ready to serve: Measure 85ml from the cocktail base to a cocktail shaker filled with ice, gently stirring lightly for one minute until cold. Pour into an cold coupe glass or similar, garnish with the cranberries adding the final touch by giving it a quick spritz with the mandarin essence over the drink.
