Petite pan-fried patties, commonly referred to as keftedes, represent a treasured delicacy in Sephardic Jewish cuisine. These particular leek fritters present a delicious fusion of rich ground beef with the subtle, slightly sweet flavour of leeks, making them truly crave-worthy.

Clean the fresh leeks well and trim off the base and the bulk of the green stalk. Cut in half longways then into half-inch rounds. Transfer in a large skillet and submerge with fresh water, then heat over a moderate heat for about 20 mins or until tender.
Strain the softened leeks and place in a big bowl with the minced beef, beaten eggs, crumbs, chopped dill, chopped parsley and spice and flavor liberally with salt and pepper. Stir thoroughly using your fingers then shape a few tablespoonfuls into a ball, flattening a slightly. Set on a plate and proceed for the rest of the ingredients.
Preheat cooking oil in a pan to a amount of about 2 centimeters over a moderate heat. When the heated oil is hot, fry the croquettes in batches until crispy on both sides. (Don't overcrowd the frying pan as this reduces the temperature of the cooking oil.) Transfer the finished patties to a plate lined with kitchen paper and allow to cool.
Offer with lemon slices.

If using fresh spinach, clean it well, removing any hard stems, and roughly chop it into sizable portions. Transfer in a large saucepan with a bit of water over a medium flame. Once cooked, remove in a strainer for about 15 minutes, then squeeze out any excess liquid and reserve.

Put the wilted spinach, sauteed onion and garlic, grated cheese, creamy cheese, grated nutmeg, red spice, breadcrumbs and beaten eggs in a large bowl and season with pepper and salt. Mix completely until blended. If the mixture looks too wet, incorporate some extra breadcrumbs.
With your fingers, shape the dough into oval shapes a bit bigger than a walnut but less bulky than an chicken egg, and set them on a tray topped with wax paper. Seal and cool for at least 1 hour.
In a wide pan over medium heat, heat olive oil to a level of about 1 centimeter. Cook the fritters a small batch for a couple of minutes each side, flipping so they are golden all over, then transfer on absorbent paper.
Serve with fresh lemon.
